New Space, New Flavors, Old School Legacy


ELLICOTTVILLE - Holiday Valley, one of the leading ski resorts in the East, is thrilled to announce the opening of Edna’s at the Tamarack Club, which will take the place of the former John Harvard’s Restaurant. The name pays homage to Edna Northrup, one of the founding members of Holiday Valley and a pioneer in the resort's history. A complete renovation of the dining space began on October 10th to create an open concept dining experience.

A Tribute to a Founding Member: Edna Northrup made her first trip to Ellicottville in 1944 to ski at Greer Hill. In the winter of 1956-1957, Edna, her husband Doc, and the other founding members of Holiday Valley banded together to sell shares of “Win-Sum Ski Corp.” stock for $100 from a card table set up on the dirt road across from the proposed ski trails (now Yodeler and Edelweiss). Looking back on Holiday Valley’s history in the early 2000s, Edna said, “In my wildest dreams I never could have imagined what Holiday Valley would become.” Her adventurous spirit and dedication to the resort have been a cornerstone in shaping Holiday Valley into a destination that boasts 13 lifts, 60 slopes and trails, 3 base lodges, two hotels, a golf course, pools, an aerial park, a mountain coaster and a number of other amenities.

The Significance of the Name: The new restaurant concept is a fitting tribute to a woman who helped shape the resort into what it is today. Edna’s at the Tamarack Club celebrates the long tradition of joyous camaraderie and warm friendships that arise out of sharing a love for skiing and the outdoors.

What to Expect: Guests can expect a high-quality yet relaxed dining experience in a beautiful setting that offers panoramic views of the ski slopes in winter and the golf course and resort pools in summer. The new restaurant will feature a menu that pays tribute to the rich history of Holiday Valley, incorporating local flavors and seasonal ingredients. From casual fare such as stone-fired Margherita Pizza and Beef on Weck Eggrolls to more refined dishes like Pesto Encrusted Australian Seabass with Sweet Tomato Risotto, the menu will appeal to a variety of appetites and will feature top quality Angus Reserve steaks.

New Culinary Leadership: Holiday Valley recently welcomed Executive Chef Andrew Culver who will lead the culinary experience throughout the resort. Chef Culver brings a sincere passion for food and an impressive resume to the Food & Beverage team. He has been instrumental in the creation of the new menu at Edna’s at the Tamarack Club, adding dishes such as Braised Short Rib Pot Roast and Grilled Shrimp and Sea Scallops over Crispy Mascarpone Polenta that are sure to be fan favorites on the new menu.

A Western New York native, Chef Culver was educated at the Culinary Institute of America in Hyde Park, New York and trained in France before returning stateside to continue his career. Culver held prestigious positions at renowned restaurants such as CityZen and the Inn at Little Washington before returning home to the WNY region. He specializes in French and American cuisine and his aptitude for creating memorable dishes will be a fantastic complement to the Edna’s dining experience.

The addition of Chef Culver along with the newly elevated guest experience at Edna’s at the Tamarack Club will allow guests of Holiday Valley to enjoy the most captivating year-round dining views that Ellicottville has to offer.
