Alpine Bistro Opening Soon

According to Bo Sunshine, marketing manager of Ellicottville Bake Shop, there is a rich history behind the building at 16 Washington Street, which has become even more apparent throughout the renovation process. Soon, the former home of Adventure Bound on the Fly will become Alpine Bistro, a welcoming place for locals, visitors, friends and family to gather and enjoy good food, drink, and company in a space with a long history of this kind of community kinship.
Those who know and love the delicious array of baked goods at Ellicottville Bake Shop will be pleased to find many of their favorite goodies at Alpine Bistro, as the two businesses are owned by Corey and Jennifer Hogan. Earlier this year, Corey approached Adventure Bound owner John Rounds about selling pastries in his business, which is also home of Ellicottville Coffee Company. When he learned that Rounds was planning to “semi-retire,” he recognized a wonderful opportunity in the 4,500-square-foot space at 16 Washington Street, and so the idea for Alpine Bistro was born!
As anyone who’s set foot in Adventure Bound knows, the large space is versatile, and the Hogans have exciting plans for its use. “We’re going to have a little bit of retail up front,” Corey explained. “We’re going to be able to serve alcohol there, so we’re going to have all kinds of exotic drinks. We’ll certainly have any kind of coffee that people can dream of, and then we’re also going to have some quiet space toward the back, where people can just sit down on a couch with a laptop or just talk with some pleasant music. And still, the basement is yet to come!”
While plans for the basement are in the works, Jennifer said the menu for Alpine Bistro is taking shape. “We plan on having some of our [Ellicottville Bake Shop] bread, pastries and desserts available there, along with a menu that will consist of sandwiches - both hot and cold - soups, salads, maybe grain bowls, and flatbreads. We haven’t finalized it, but something along these lines.”
Jennifer explained that the Alpine Bistro’s targeted opening date is sometime mid-December, but currently a side room is already open selling Ellicottville Bake Shop pastries and Ellicottville Coffee Company beverages while the renovations continue. Sunshine said, “We purchased the Ellicottville Coffee Company business in its entirety and will continue the subscription service for ECC beans.”
Additionally, Corey Hogan has partnered with Rocket Cup Coffee of Olean, so Alpine Bistro will also serve Rocket Cup coffee, and Ellicottville Bake Shop goods will be available for purchase at Rocket Cup in Olean. Corey noted that with the Christmas season fast approaching, now is a good time to order pies; stop in or call Ellicottville Bake Shop at 716-699-9116.
Sunshine and the Hogans, who are all western New York natives, are excited to introduce the community to Alpine Bistro and create a place where locals and out-of-towners look forward to visiting. Corey said, “I think what we’ve been trying to do is look around and see what’s there in Ellicottville and what isn’t and try to provide a bit of a community center where people can come in and they’re going to have a place or two to sit down and relax… You can run into people you know and have a cup of coffee or Pepsi, depending on what you like to drink, maybe get a sweet roll. And if you want to sit down and have a bowl of soup, you can do that, too, the idea being to offer a lot of alternatives under one roof.”
