It’s been hella hot this summer and it doesn’t seem to be easing up, which means extra sweat, extra fatigue and all around uncomfortable feelings. We could all use a little more juice to keep us going. Well, that isn’t a problem if you head down to the new JUICED Smoothie, Drinks and Bowls shop in Salamanca, NY. Newly opened and offering a great selection of fresh made concoctions to satisfy your body’s recharging needs. EllicottvilleNOW spoke with owner Dawn Colburn as she shared her story with us.
Juiced has been open since June 14, 2024. Dawn is a social worker who had a goal of opening a non-profit healing center to assist people in mental and spiritual well-being, offering various forms of meditation and energy work. As part of that goal, she started with a feeder business to eventually help offset the costs of the healing center. While contemplating what type of business, she considered the limited food options in the area and the frustration she, herself often feels trying to find healthier options and ways to get fruits and vegetables that her body needs. Visiting juiceries in her travels is one of her favorite things to do. She also has an interest in public health initiatives to improve the overall health of our community, so as she put things in motion, doors just kept opening and opportunities were presented. While doing social work and consulting work on the opioid epidemic, she spent her weekends planning for the juicery and purchasing equipment.
What are the benefits of juicing you ask? Well, a great many, countless really. Dawn believes that many of us lead such busy fast-paced lives that healthy nutrition is a challenge (and oh, she isn’t wrong). She says, “We fuel up on caffeine and just keep pushing our bodies without proper self care mentally or physically. Our body lets us know with signs of feeling sluggish, tired, poor digestion, cholesterol and blood pressure levels, diabetes, etc. It has been so exciting to witness our customers already seeing improvements in all of these areas in a natural way without the use of pharmaceuticals.”
Juiced currently offers 6 different kinds of juices that are freshly pressed daily. One for each color of the rainbow, filled with a variety of fruits and vegetables that increase your intake of different nutrients and various health benefits. How are the colors so vibrant? Dawn explained, “Fruits and vegetables contain different pigments called phytonutrients that give them their color and are linked to higher levels of specific nutrients. The most vibrantly colored fruits and vegetables are often the richest in vitamins, minerals, fiber, and antioxidants. We try to make them taste good by balancing the flavors.”
You can’t pass up their fantastic smoothie selection either. From the basic Strawberry Banana to the intriguing Granny’s Got a Date - a blend of spinach, ginger, almond butter, apples, cinnamon and coconut milk for heart & bone health, digestion, antioxidants and energy - they have something to bring a smile to anyone’s face. And they aren’t a one trick pony, either! No, they also offer superfood bowls, toasts, and are looking to expand their menu further as time goes on. “The bowls have an all natural sorbet on the bottom that is made from various superfoods, such as acai, dragon fruit (pitaya), passion fruit and coconut. They are considered a superfood because they are loaded with nutrients and have many health benefits. The bowls are then topped with organic granola and fresh fruit. You can also add organic peanut butter, almond butter or Nutella for extra protein, or honey, chia, flax or hemp seeds for additional nutrition.”
Dawn went on to say, “My son is a professional athlete and eats these bowls regularly when he’s traveling. They are an excellent breakfast option, along with the toast we offer. We currently offer 2 kinds of toast. The Holy Guacamole is made with multigrain bread topped with homemade guacamole, Everything seasoning and chia/flax/hemp seeds. The Berry Much is made with multigrain bread topped with organic peanut butter, almond butter or Nutella with bananas and strawberries, granola, honey, and chia/flax/hemp seeds.”
They have also just begun their Taco Tuesday and are planning on offering protein (poke) bowls and burritos soon. In that vein, they are featuring an amazing local chef, Jerry Forness. As Dawn stated, “Jerry is a local graduate of Salamanca, trained as a chef and moved out west to gain experience. Jerry is renowned in the BBQ business, winning competitions in Kansas City, and he was featured with his partners on the TV show Diners, Drive-ins, and Dives with Guy Fieri. Jerry has returned home and is excited to share his skills with the community.”
Dawn wanted everyone to know that she has been surprised by the enthusiasm and interest locally in healthier options and is so thankful for the support of the local and widespread community.
