Erin Horton, a native of Springville, ran independent restaurants and large corporate ventures for nearly 20 years before starting Edible Crush Catering. She has traveled nationally and internationally with a CMC (certified master chef) and won numerous local and National awards and competitions! This Culinary Institute of America graduate has come home, with more than a few accolades on her resume from being the first female Executive Chef for Delaware North’s Parks and Resorts Division to Store Chef for Wegmans’ Orchard Fresh grocery store concept.

After a period, she came home, quite honestly hoping she could coast, enjoy her two kiddos, and not work for a bit. But, once people in the community heard she was back in the area, they kept her quite busy, asking to work her culinary magic for company luncheons, social affairs, weddings, etc. It became clear to her that she would have to start her own catering business.

As luck would have it, Erin found a full commercial kitchen in the village of Springville at 39 E. Main Street (it used to be a restaurant), and she was in business. Well, of course, it sounds simpler than it was. She ran it on her own for years, with partner Rob stepping in the last few years. Together, they made the seemingly impossible into possible. (Which seems to be their business motto - more about that later). She loves food, loves presenting it in a unique way people will be excited about… she wants her clients to have a crush on food, hence, Edible Crush.

When you call Erin and Rob, they don’t come to see you armed with pre-printed price sheets and set menus. Edible Crush truly is one-of-a-kind, allowing the client to make the suggestions and decisions based on their desires and their budget. This is when Rob and Erin take an opportunity to see what venue they are working with, which gets Rob’s creative juices flowing. Rob’s culinary role in the kitchen is strictly as sous chef. His forte is logistics. He can create something the venue might be lacking, like a corner table he needed at a location for a party - yep, he made it. The grazing boards, as they like to call them (rather than charcuterie boards), are often presented on beautiful wooden platters, shaped for the occasion, and created by Rob.

In their words, “We have no hard and fast policies and procedures and are very open to working with other food and beverage vendors.” The entire process is customer driven, and the customers are given the unique opportunity to have their project viewed through three very different lenses - theirs (the dream), Erin’s (the culinary expertise), and Rob’s (facilitating the most interesting/exciting presentation possible). Their complementary but different backgrounds provide them with an opportunity to create not only the food, but all the custom pieces. And, aside from events, they do home custom catering for that special meal where you are catered to in your own home. Ahhhhh!

Erin claims that “Rob is a tremendous force and the peace behind the chaos. There is nothing he can’t do or figure out. As a lifelong builder, furniture designer, electrician, plumber, and renaissance man, he brings the impossible into the possible.” Remember that motto mentioned earlier?

I think the ideal catering I hoped for was something that tasted good and didn't break the bank. Edible Crush encompassed those things but went so far above and beyond any expectations we ever even thought to have that we're both still in awe (and figuring out what event we can plan next just for the food!)”

Together, this team and their staff bring anything imaginable to the table - and it looks as amazing as it tastes. Their dichotomy of skills, mastery of fundamentals and dynamic working relationship makes the customer the winner.
